Well, the holidays are in full force and panic has set in.  I realized that next week is my son's last week in pre-school before the holiday which means I have to finish teacher's gifts and classroom treats before Friday.  I am still working out what I will do for the teacher's but know that they will include this yummy treat that I will make for the classroom treats:

I have to share this recipe!

I have to admit that I am not the Chef in my home... It is definently my husband.  His latest dish was definently one of my faves and I just have to share the recipe!  Let me give you a little background as well.  My husband is allergic to many fruits and if he has them they have to be cooked or they have to be organic.  One of his favorite fruits is peaches and it just kills him that he cannot eat them without searching for organic, so he decided to make a Peach Cobbler for us and I am so excited that he did!

Ingredients:

1 1/2 cup self-rising flour
8 tablespoon (1 stick) butter
1/2 cup water
2 cup sugar, divided
4 cup peeled, sliced peaches
1 1/2 cup milk
ground cinnamon, optional

Directions
Preheat oven to 350 degrees.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

Put the butter in a 3-quart baking dish and place in oven to melt. Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes. To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

Cook Time: 45 min
Difficulty: Easy
